Ingredients

1 cup heavy cream

1 cup Greek yogurt

½ cup lemon curd (store-bought or homemade)

¼ cup powdered sugar

1 teaspoon vanilla extract

Zest of 1 lemon

1 cup crushed digestive biscuits or graham crackers

½ cup fresh blueberries (or mixed berries)

Fresh mint leaves (for garnish)

Instructions

Prepare the Cream Mixture: In a medium mixing bowl, combine the heavy cream, Greek yogurt, powdered sugar, lemon curd, vanilla extract, and lemon zest. Whip the mixture using a hand mixer or a whisk until soft peaks form. Be careful not to over-whip; the mixture should be creamy and smooth.

Prepare the Base Layer: In a separate bowl, crush the digestive biscuits or graham crackers until they resemble coarse crumbs. Set aside.

Layer the Parfaits: In clear parfait cups or glasses, start by adding a layer of the crushed biscuits at the bottom. Next, spoon in a layer of the creamy lemon mixture. Follow with a layer of fresh blueberries or mixed berries. Repeat these layers until you reach the top of the cups, finishing with a layer of the creamy lemon mixture.

Chill: Cover the parfaits with plastic wrap and place them in the refrigerator for at least 1 hour to allow the flavors to meld and the parfaits to chill.

Garnish and Serve: When ready to serve, add a sprinkle of crushed biscuits on top, a few fresh berries, and a mint leaf for garnish. Enjoy immediately for a refreshing treat!
