1 lb (450g) fresh potato gnocchi

2 cups fresh spinach, roughly chopped

1 tablespoon olive oil

2 cloves garlic, minced

1 cup heavy cream

1 tablespoon lemon juice (freshly squeezed)

Zest of 1 lemon

1/2 cup grated Parmesan cheese

Salt and pepper to taste

1/4 teaspoon crushed red pepper flakes (optional)

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Cook the Gnocchi: Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions until they float to the surface (about 2-3 minutes). Drain and set aside.
