1 pound gnocchi (store-bought or homemade)

2 tablespoons olive oil

2 tablespoons unsalted butter

8 oz cremini mushrooms, sliced

4 cloves garlic, minced

1 cup heavy cream

1 cup vegetable broth

1/2 cup grated Parmesan cheese

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Cook the Gnocchi: In a large pot, bring salted water to a boil. Add the gnocchi and cook according to package instructions until they float to the surface (about 2-3 minutes). Drain and set aside.

    Sauté the Mushrooms: In a large skillet over medium heat, add the olive oil and butter. Once the butter melts, add the sliced cremini mushrooms. Sauté for about 5-6 minutes, or until the mushrooms are golden and tender.

      Add Garlic: Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant, making sure not to burn the garlic.

        Create the Sauce: Pour in the vegetable broth and heavy cream, stirring well to combine. Bring the mixture to a gentle simmer and let it cook for about 5 minutes, allowing it to thicken slightly.
