Creamy Mushroom Pasta with Spinach

12 oz fettuccine or linguine pasta

2 cups fresh spinach, washed and roughly chopped

2 cups cremini or button mushrooms, sliced

3 cloves garlic, minced

1 small onion, finely chopped

1 cup heavy cream or coconut cream for a dairy-free option

1/2 cup grated Parmesan cheese (optional or use nutritional yeast for a vegan option)

1/4 cup vegetable or chicken broth

2 tablespoons olive oil

1 teaspoon dried thyme

1/2 teaspoon crushed red pepper flakes (optional)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine or linguine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté the Vegetables: In a large skillet over medium heat, heat the olive oil. Add the chopped onion and sauté for about 2-3 minutes until translucent. Add the minced garlic and sliced mushrooms, cooking until browned and tender, about 5-7 minutes.

      Add the Spinach: Stir in the chopped spinach, cooking it down until wilted, around 2 minutes.

        Create the Cream Sauce: Lower the heat and pour in the vegetable or chicken broth, followed by the heavy cream. Stir in the thyme, and crushed red pepper flakes (if using), and season with salt and pepper. Let the mixture simmer for 3-4 minutes until slightly thickened.

          Combine Pasta and Sauce: Add the cooked pasta to the skillet, tossing to coat it thoroughly in the creamy mushroom sauce. If the sauce is too thick, add a little reserved pasta water until you reach your desired consistency.

            Finishing Touches: Stir in the grated Parmesan cheese (if using) until melted and combined. Adjust seasoning with more salt and pepper as needed.

              Serve: Plate the creamy mushroom pasta and garnish with fresh parsley. Serve immediately for a delicious, hearty meal!
