Creamy Mushroom Spinach Pasta

8 oz (225g) fettuccine or linguine pasta

2 tablespoons olive oil

3 cloves garlic, minced

8 oz (225g) mushrooms, sliced (button, cremini, or a mix)

4 cups fresh spinach

1 cup heavy cream

1 cup vegetable or chicken broth

1 teaspoon Dijon mustard

1 teaspoon Italian seasoning

Salt and black pepper to taste

½ cup grated Parmesan cheese + extra for serving

Fresh parsley, chopped (for garnish)

Lemon wedges (optional, for serving)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine or linguine according to package directions until al dente. Reserve ½ cup of pasta water, then drain the pasta and set aside.

    Sauté the Vegetables: In a large skillet over medium heat, add the olive oil. Once hot, add the minced garlic and sauté for about 30 seconds until fragrant. Add the sliced mushrooms to the skillet; cook for 5-7 minutes or until they are tender and browned.

      Add the Spinach: Stir in the fresh spinach and cook until wilted, about 2-3 minutes.

        Create the Creamy Sauce: Pour in the vegetable or chicken broth, followed by the heavy cream, Dijon mustard, Italian seasoning, salt, and black pepper. Mix well and bring to a gentle simmer. Allow the sauce to thicken for about 5-6 minutes.

          Combine Pasta and Sauce: Once the sauce has thickened slightly, add the cooked pasta to the skillet. Toss to coat the pasta evenly in the creamy sauce. If needed, add reserved pasta water a little at a time to reach the desired consistency.

            Finish with Cheese: Stir in the grated Parmesan cheese until melted and well incorporated. Adjust seasoning if necessary.
