1 lb Italian sausage (mild or spicy, casings removed)

1 medium onion, diced

3 cloves garlic, minced

3 carrots, diced

2 celery stalks, diced

4 cups chicken broth

1 can (14 oz) diced tomatoes (with juices)

1 cup ditalini pasta

1 cup heavy cream

1 cup grated Parmesan cheese

1 teaspoon dried Italian herbs (basil, oregano, thyme)

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Sauté the Vegetables: In a large pot, heat the olive oil over medium heat. Add the diced onion, carrots, and celery, and sauté for about 5 minutes, until the vegetables are softened. Stir in the minced garlic and cook for an additional minute until fragrant.
