Creamy Pesto Chicken Pasta

12 oz pasta (fusilli or penne)

2 chicken breasts, boneless and skinless

1 cup homemade or store-bought pesto

1 cup heavy cream

1 cup cherry tomatoes, halved

1 cup spinach, fresh

2 cloves garlic, minced

1 tablespoon olive oil

1/2 cup grated Parmesan cheese

Salt and pepper, to taste

Fresh basil leaves, for garnish

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the pasta according to package instructions until al dente. Drain and set aside, reserving about 1/2 cup of the pasta water.

    Prepare the Chicken: While the pasta cooks, season the chicken breasts with salt and pepper. In a large skillet, heat the olive oil over medium heat. Add the chicken and cook for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C). Remove from the skillet and let rest for a few minutes before slicing into strips.

      Sauté the Vegetables: In the same skillet, add minced garlic and sauté for about 1 minute until fragrant. Add the cherry tomatoes and cook for another 2-3 minutes until they start to soften. Then, add the spinach and cook until wilted.

        Make the Cream Sauce: Lower the heat and stir in the pesto and heavy cream. Mix well until combined and heated through. If the sauce is too thick, gradually add reserved pasta water until you reach the desired consistency.

          Combine: Add the cooked pasta and chicken strips to the skillet, tossing to coat everything evenly in the creamy pesto sauce. Stir in the grated Parmesan cheese and mix until melted and creamy. Adjust seasoning with additional salt and pepper, if needed.

            Serve: Divide the creamy pesto chicken pasta into bowls. Garnish with fresh basil leaves and extra Parmesan cheese, if desired.
