Ingredients
  

1 pound ground beef or turkey

1 medium onion, diced

3 cloves garlic, minced

4 medium potatoes, peeled and diced

2 carrots, sliced

2 stalks celery, sliced

4 cups beef broth

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper to taste

1 cup heavy cream (or milk for a lighter version)

1 cup shredded cheddar cheese

2 tablespoons Worcestershire sauce

Fresh parsley for garnish

Instructions
 

In a skillet over medium heat, cook the ground beef (or turkey) until browned, breaking it apart with a spatula. Drain excess grease if necessary.

    Transfer the browned meat to the crockpot. Add the diced onion, garlic, potatoes, carrots, and celery on top of the meat.

      Pour in the beef broth, then sprinkle in the thyme, oregano, salt, and pepper. Give everything a gentle stir to combine.

        Cover the crockpot with the lid and cook on low for 6-8 hours or on high for 3-4 hours, until the vegetables are tender.

          About 30 minutes before serving, stir in the Worcestershire sauce and heavy cream (or milk). Allow it to heat through in the crockpot.

            Just before serving, add the cheddar cheese and stir until it's melted and creamy. Taste and adjust seasoning if needed.

              Ladle the soup into bowls, garnish with fresh parsley, and serve warm alongside crusty bread.
