Ingredients

2 cups mashed potatoes (preferably from freshly boiled potatoes)

1 cup shredded cheddar cheese

1/2 cup cream cheese, softened

1/2 cup all-purpose flour

1 large egg

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/4 teaspoon black pepper

1/4 teaspoon paprika

Salt to taste

1 cup breadcrumbs (for coating)

Vegetable oil (for frying)

Instructions

Prepare the Potato Mixture: In a large mixing bowl, combine the mashed potatoes, cheddar cheese, and cream cheese. Mix until smooth and well combined.

Season the Mixture: Add the flour, egg, garlic powder, onion powder, black pepper, paprika, and salt to the potato mixture. Stir until everything is thoroughly incorporated.

Shape the Puffs: Take a spoonful of the potato mixture and roll it into a ball or shape it into a small puff. Repeat this step until all the mixture is shaped into puffs.

Coat the Puffs: Roll each potato puff in breadcrumbs until well-coated. This will give the puffs their crispy texture upon frying.

Fry the Puffs: Heat vegetable oil in a deep pan or skillet over medium heat. Once the oil is hot (around 350°F or 175°C), carefully add a few potato puffs at a time, ensuring not to overcrowd the pan. Fry until golden brown, about 3-4 minutes per side.

Drain and Serve: Once done, use a slotted spoon to remove the potato puffs from the oil and place them on a paper towel-lined plate to drain excess oil. Serve warm, garnished with fresh herbs if desired.
