4 large red bell peppers

1 cup cream cheese, softened

1/2 cup sour cream

1/4 cup mayonnaise

3 cloves garlic, minced

1 tsp smoked paprika

1/2 tsp salt

1/2 tsp black pepper

2 tbsp olive oil

1 tbsp fresh parsley, chopped (for garnish)

Optional: 1 tsp red pepper flakes (for extra heat)

Instructions
 

Roast the Peppers: Preheat your oven to 450°F (230°C). Place the red bell peppers on a baking sheet and drizzle them with olive oil, ensuring they are well coated. Roast in the preheated oven for about 25-30 minutes, or until the skin is blistered and charred, turning them halfway through.

    Cool and Peel: Once roasted, remove the peppers from the oven and place them in a bowl, covering it with plastic wrap for about 10 minutes. This traps steam and helps in peeling. After 10 minutes, carefully peel off the charred skins, remove the stems and seeds, and chop the roasted peppers.

      Blend the Base: In a food processor, combine the roasted red peppers, softened cream cheese, sour cream, mayonnaise, minced garlic, smoked paprika, salt, and black pepper. If you like it spicy, add red pepper flakes at this stage.

        Mix Until Smooth: Blend the mixture on high until it’s smooth and creamy. Taste and adjust seasoning as desired.

          Chill: Transfer the dip into a serving bowl and refrigerate for at least 1 hour before serving. This allows the flavors to meld beautifully.
