Creamy Roasted Red Pepper Pasta

12 oz (340g) pasta of your choice (fettuccine, penne, or spaghetti)

3 large red bell peppers

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup heavy cream

1/2 cup grated Parmesan cheese

1 tablespoon olive oil

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional)

Salt and pepper, to taste

Fresh basil leaves, for garnish (optional)

Instructions
 

Roast the Red Peppers: Preheat your oven to 450°F (230°C). Place the red bell peppers on a baking sheet and roast for 25-30 minutes, turning occasionally, until the skin is charred and blistered. Remove from the oven, cover with aluminum foil, and let them steam for about 10 minutes. Once cooled, peel off the skins, remove stems and seeds, and roughly chop the peppers.

    Cook the Pasta: While the peppers are roasting, bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of the pasta water, then drain the pasta and set aside.

      Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for 5-6 minutes, or until translucent. Add the minced garlic and red pepper flakes (if using) and sauté for another minute until fragrant.

        Blend the Sauce: Add the roasted red peppers to the skillet with the onion and garlic. Pour in the heavy cream, dried basil, salt, and pepper. Using an immersion blender (or a regular blender), blend until the mixture is smooth and creamy. If using a regular blender, return the sauce to the skillet afterward.

          Combine Pasta and Sauce: Add the cooked pasta to the skillet with the creamy roasted red pepper sauce. Toss to combine, adding reserved pasta water a little at a time until you reach your desired sauce consistency.

            Add Cheese and Serve: Stir in the grated Parmesan cheese until melted and well incorporated. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh basil leaves and additional Parmesan if desired.
