2 lbs fresh ripe tomatoes, halved

1 medium onion, chopped

4 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon dried basil

1 teaspoon dried oregano

Salt and pepper, to taste

4 cups vegetable broth

1 cup heavy cream (or cashew cream for a vegan option)

2 tablespoons balsamic vinegar

Fresh basil leaves, for garnish

Crusty bread, for serving

Roast the Tomatoes and Aromatics: Preheat your oven to 400°F (200°C). On a large baking sheet, toss the halved tomatoes, chopped onion, and minced garlic with olive oil, dried basil, dried oregano, salt, and pepper. Spread them out in a single layer. Roast in the oven for 30-35 minutes, or until the tomatoes are soft and beginning to caramelize.

    Blend the Mixture: Once roasted, remove the baking sheet from the oven and let it cool slightly. Transfer the roasted mixture (including all the juices) into a blender or use an immersion blender in a large pot. Blend until smooth and creamy.

      Cook the Soup: In a large pot over medium heat, pour in the blended tomato mixture and add the vegetable broth. Stir to combine and bring to a gentle simmer. Let it cook for about 10 minutes to allow the flavors to meld.

        Add Cream and Seasoning: Reduce the heat to low and stir in the heavy cream (or cashew cream) and balsamic vinegar. Warm gently without bringing it to a boil. Taste and adjust salt and pepper as needed.

          Serve: Ladle the bisque into bowls and garnish with fresh basil leaves. Enjoy it hot with slices of crusty bread on the side.
