Creamy Roasted Tomato Pasta

4 cups cherry tomatoes, halved

3 tablespoons olive oil

Salt and pepper, to taste

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

1 cup heavy cream

1 cup grated Parmesan cheese

1 pound pasta (fettuccine or penne works great)

Fresh basil leaves, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Roast the Tomatoes: On a baking sheet, toss the halved cherry tomatoes with 2 tablespoons of olive oil, salt, pepper, minced garlic, oregano, and dried basil. Spread them out in a single layer and roast in the preheated oven for 20-25 minutes, until the tomatoes are blistered and caramelized.

      Cook the Pasta: While the tomatoes are roasting, bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

        Make the Cream Sauce: In a large skillet over medium heat, add the remaining 1 tablespoon of olive oil. Once hot, pour in the heavy cream and bring it to a simmer. Stir in the grated Parmesan cheese until melted and smooth. You can adjust the thickness by adding some reserved pasta water if needed.

          Combine Ingredients: Add the roasted tomatoes (with all the juices) to the cream sauce. Gently fold in the cooked pasta and stir until everything is well coated. If the sauce is too thick, add additional pasta water, a little at a time, until it reaches your desired consistency.

            Garnish and Serve: Taste and adjust the seasoning if needed. Serve hot, garnished with fresh basil leaves and extra Parmesan if desired.
