8 ounces rotini or penne pasta

1 pound ground beef

1 small onion, diced

2 cloves garlic, minced

1 (10-ounce) can Rotel diced tomatoes with green chiles

1 (8-ounce) block cream cheese, softened

1 cup shredded cheddar cheese

1 cup beef broth

1 teaspoon chili powder

1 teaspoon cumin

Salt and pepper to taste

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

    Brown the Beef: In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula. Drain excess fat if necessary.
