1 lb fresh shrimp, peeled and deveined

4 cups seafood or chicken broth

1 medium onion, finely chopped

2 cloves garlic, minced

2 medium potatoes, diced

1 cup corn kernels (fresh or frozen)

1 cup heavy cream

1 tablespoon olive oil

2 tablespoons butter

1 teaspoon smoked paprika

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté Vegetables: In a large pot, heat the olive oil and butter over medium heat. Add the chopped onion and minced garlic, sautéing until translucent (about 3-4 minutes).

    Cook Potatoes: Add the diced potatoes to the pot, then pour in the seafood or chicken broth. Bring to a boil, then reduce heat and let it simmer for about 10 minutes, or until the potatoes are tender.

      Season the Broth: Stir in the corn, smoked paprika, thyme, salt, and pepper. Allow the mixture to simmer for an additional 5 minutes.

        Add Shrimp: Finally, add in the shrimp and let them cook for about 3-5 minutes, until they turn pink and opaque.

          Make it Creamy: Reduce the heat to low and stir in the heavy cream. Allow the chowder to heat through for another 2 minutes, without boiling.
