Creamy Spinach and Artichoke Pasta Bake

12 oz (340g) pasta (penne or fusilli work well)

1 cup fresh spinach, chopped

1 can (14 oz) artichoke hearts, drained and quartered

1 cup ricotta cheese

1 cup cream cheese, softened

1 cup shredded mozzarella cheese, plus extra for topping

½ cup grated Parmesan cheese

3 cloves garlic, minced

1 tsp onion powder

½ tsp red pepper flakes (optional)

Salt and pepper to taste

½ cup milk

2 tbsp olive oil

Fresh parsley for garnish

Preheat Oven: Preheat your oven to 375°F (190°C).

    Cook Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook until al dente according to package instructions. Drain and set aside.

      Prepare the Sauce: In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté until fragrant (about 1 minute).

        Mix in Vegetables: Add the chopped spinach and artichoke hearts to the skillet. Sauté for 5-7 minutes until the spinach is wilted. Season with onion powder, red pepper flakes (if using), salt, and pepper.

          Combine Cheeses: In a large bowl, mix together the ricotta, cream cheese, milk, and half of the mozzarella and Parmesan cheeses. Stir until smooth and creamy.

            Combine Ingredients: Add the sautéed spinach and artichokes to the cheese mixture along with the cooked pasta. Gently stir until everything is well-coated.

              Transfer to Baking Dish: Pour the pasta mixture into a greased 9x13 inch baking dish. Spread evenly.

                Add Toppings: Sprinkle the remaining mozzarella and Parmesan cheese over the top.
