Creamy Spinach and Chicken Pasta Bake

12 oz (340g) penne pasta

2 cups shredded rotisserie chicken (or cooked chicken breast, diced)

1 tablespoon olive oil

3 garlic cloves, minced

5 cups fresh spinach (or 2 cups frozen spinach, thawed and drained)

1 small onion, finely chopped

1 cup cream cheese, softened

1 cup sour cream

1 cup grated Parmesan cheese

2 cups shredded mozzarella cheese (divided)

1 teaspoon Italian seasoning

Salt and pepper to taste

½ teaspoon red pepper flakes (optional for extra heat)

Fresh basil for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish.

    Cook the Pasta: Bring a large pot of salted water to a boil. Add the penne pasta and cook until al dente, according to package instructions. Drain and set aside.

      Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent, about 3-4 minutes.

        Add Spinach: Stir in the fresh spinach (if using frozen spinach, add after draining) and cook until wilted, around 2-3 minutes. Season with salt, pepper, and red pepper flakes (if using).

          Combine Cream Mixture: In a large bowl, mix the softened cream cheese, sour cream, and Italian seasoning until well combined. Stir in the shredded rotisserie chicken, the sautéed vegetables, cooked pasta, 1 cup of mozzarella cheese, and half of the grated Parmesan. Mix everything until well incorporated.

            Transfer to Baking Dish: Pour the mixture into the prepared baking dish, spreading it evenly. Top with the remaining mozzarella and Parmesan cheese.

              Bake: Cover the baking dish with aluminum foil (to prevent over-browning) and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the top is bubbly and golden brown.

                Garnish and Serve: Remove from the oven and let it sit for about 5 minutes. Garnish with fresh basil leaves if desired, and serve hot.
