Creamy Spinach and Mushroom Pasta

8 oz (225 g) pasta (fettuccine or penne works great)

2 tbsp olive oil

2 cloves garlic, minced

8 oz (225 g) fresh mushrooms, sliced (cremini or button)

4 cups fresh spinach leaves

1 cup heavy cream

½ cup grated Parmesan cheese

1 tsp Italian seasoning

Salt and pepper to taste

A squeeze of lemon juice (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package directions until al dente. Reserve ½ cup of pasta water, then drain and set aside.

    Sauté the Garlic and Mushrooms: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the sliced mushrooms and cook until softened and browned, about 5-7 minutes.

      Add Spinach: Add the fresh spinach to the skillet with the mushrooms. Stir and cook until the spinach wilts, which should take about 2-3 minutes.

        Create the Cream Sauce: Lower the heat and pour in the heavy cream. Stir well to combine, then add the Parmesan cheese, Italian seasoning, salt, and pepper. Let it simmer gently for about 3-5 minutes, allowing the sauce to thicken. If it’s too thick, add a bit of the reserved pasta water until desired consistency is reached.

          Combine with Pasta: Add the cooked pasta to the skillet and toss everything together, ensuring the pasta is well-coated in the creamy sauce. If you’d like a hint of acidity, add a squeeze of lemon juice at this point.
