200g fresh spinach, washed and roughly chopped

250ml heavy cream

100g grated Parmesan cheese (plus extra for serving)

Salt and pepper, to taste

1 teaspoon dried Italian herbs (optional)

Fresh basil leaves, for garnish (optional)

Cook the pasta: In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve about 1 cup of pasta water before draining and set aside.

    Sauté the garlic and mushrooms: In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Add the sliced mushrooms and cook until they are browned and have released their moisture, around 5-7 minutes.

      Add the spinach: Once the mushrooms have cooked down, stir in the chopped spinach. Cook for an additional 2-3 minutes until the spinach wilts.
