Creamy Spinach Ricotta Pasta Bake

12 oz (340g) penne or rigatoni pasta

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

10 oz (280g) fresh spinach, chopped (or 1 cup frozen spinach, thawed and drained)

15 oz (425g) ricotta cheese

1 cup (240ml) heavy cream

1 cup (100g) grated Parmesan cheese, divided

1 cup (100g) shredded mozzarella cheese, plus extra for topping

1 teaspoon Italian seasoning

Salt and freshly ground black pepper, to taste

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Pasta: Boil a large pot of salted water. Add the pasta and cook until al dente according to package directions. Drain and set aside.

      Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Stir in minced garlic and sauté for an additional 1 minute until fragrant.

        Add Spinach: If using fresh spinach, add it to the skillet and cook until wilted, about 2-3 minutes. If using frozen spinach, stir it in and cook for another 2 minutes until heated through. Season with salt and pepper to taste.

          Make the Creamy Mixture: In a large mixing bowl, combine ricotta cheese, heavy cream, ½ cup of grated Parmesan cheese, shredded mozzarella, Italian seasoning, salt, and pepper. Mix until well combined.

            Combine Everything: Add the cooked pasta to the skillet with spinach and onion. Pour the creamy ricotta mixture over the pasta and stir gently until everything is well coated.

              Transfer to Baking Dish: Pour the entire mixture into a greased 9x13 inch (23x33 cm) baking dish. Sprinkle the remaining ½ cup of Parmesan cheese and extra mozzarella on top for a cheesy crust.

                Bake: Place the dish in the preheated oven and bake for 25-30 minutes, or until bubbly and golden on top.

                  Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves if desired, and serve hot.
