1 lb (450g) potato gnocchi (store-bought or homemade)

1 cup sun-dried tomatoes in oil, drained and chopped

2 cups heavy cream

1 cup vegetable or chicken broth

1 cup fresh spinach, roughly chopped

1 cup grated Parmesan cheese

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon Italian seasoning (oregano, basil, thyme)

Salt and pepper, to taste

Fresh basil leaves, for garnish

Optional: Red pepper flakes for heat

Cook the gnocchi: In a large pot of salted boiling water, add the gnocchi. Cook according to the package instructions until they float to the surface (about 2-3 minutes). Drain and set aside.

    Prepare the sauce: In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant.

      Incorporate sun-dried tomatoes: Stir in the chopped sun-dried tomatoes and Italian seasoning. Cook for another 2-3 minutes, allowing the flavors to meld.
