2 large sweet potatoes, peeled and cubed

1/2 cup Greek yogurt

1/4 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon honey or maple syrup

1 teaspoon apple cider vinegar

1/2 teaspoon garlic powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

1/4 cup chopped red onion

1/4 cup chopped celery

1/4 cup chopped fresh dill or parsley

1/4 cup dried cranberries or raisins

1/4 cup toasted pecans or walnuts (optional)

Instructions
 

Cook the Sweet Potatoes: In a large pot, fill with water and bring to a boil. Add the cubed sweet potatoes and cook until fork-tender, about 10-12 minutes. Drain and let them cool completely.

    Prepare the Dressing: In a mixing bowl, combine Greek yogurt, mayonnaise, Dijon mustard, honey (or maple syrup), apple cider vinegar, garlic powder, smoked paprika, salt, and pepper. Whisk until smooth and creamy.

      Combine Ingredients: Once the sweet potatoes have cooled, in a large mixing bowl, combine the sweet potatoes with red onion, celery, dill (or parsley), cranberries (or raisins), and nuts (if using).
