Ingredients

4 boneless, skinless chicken breasts

Salt and pepper, to taste

2 tablespoons olive oil

1 medium onion, diced

4 cloves garlic, minced

1 can (14.5 oz) diced tomatoes, drained

1 cup heavy cream

1 cup chicken broth

1 teaspoon Italian seasoning

1 cup fresh basil leaves, chopped (plus extra for garnish)

1 cup grated Parmesan cheese

1 teaspoon red pepper flakes (optional)

Freshly ground black pepper, to taste

Cooked pasta or rice, for serving

Instructions

Prepare the Chicken: Season the chicken breasts generously with salt and pepper.

Sear the Chicken: In a large skillet over medium heat, heat the olive oil. Add the chicken breasts and cook for about 6-8 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Sauté Onion and Garlic: In the same skillet, add the diced onion and sauté until translucent, about 3-4 minutes. Add minced garlic and cook for an additional 1 minute until fragrant.

Add Tomatoes and Cream: Stir in the drained diced tomatoes, heavy cream, chicken broth, and Italian seasoning, mixing well to combine. Bring the mixture to a gentle simmer.

Incorporate Basil and Cheese: Add the chopped fresh basil and grated Parmesan cheese to the sauce. Stir until the cheese is melted and the sauce is creamy. If you like some heat, add red pepper flakes at this stage. Adjust salt and pepper to taste.

Combine Chicken with Sauce: Return the seared chicken breasts to the skillet, spooning the creamy tomato basil sauce over the top. Allow to simmer for an additional 3-4 minutes, letting the chicken absorb the sauce flavors.

Serve: Plate the chicken and generously ladle the creamy sauce over it. Serve with cooked pasta or rice, and garnish with extra basil and a sprinkle of Parmesan cheese if desired.
