4 salmon fillets (about 6 oz each)

Salt and pepper, to taste

2 tablespoons olive oil

3 cloves garlic, minced

1 medium onion, finely chopped

1 cup cherry tomatoes, halved

1 cup fresh spinach leaves

1 cup heavy cream

½ cup grated Parmesan cheese

1 teaspoon Italian seasoning (or herbs de Provence)

1 tablespoon lemon juice

Fresh basil, for garnish (optional)

Instructions
 

Prepare the Salmon: Season both sides of the salmon fillets with salt and pepper.

    Sear the Salmon: In a large skillet, heat the olive oil over medium-high heat. Add the salmon, skin-side down. Cook for about 4-5 minutes per side, or until the salmon is cooked through and easily flakes with a fork. Remove from the skillet and set aside.

      Sauté the Aromatics: In the same skillet, add the minced garlic and chopped onion. Sauté for about 2-3 minutes, until the onion is translucent and fragrant.

        Add Vegetables: Stir in the cherry tomatoes and cook for another 2-3 minutes until they start to soften. Add the fresh spinach and cook until wilted.

          Make the Creamy Sauce: Lower the heat and pour in the heavy cream. Stir in the grated Parmesan cheese and Italian seasoning. Continuously stir until the cheese melts and the sauce thickens slightly, about 3-5 minutes. Taste and adjust seasoning with salt, pepper, and lemon juice.

            Combine: Gently return the salmon to the skillet, spooning the creamy sauce over the fish. Let it simmer together for an additional 2 minutes to warm the salmon.
