Ingredients

12 oz linguine pasta

1 lb large shrimp, peeled and deveined

3 tablespoons olive oil

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 cup fresh spinach

1 cup heavy cream

½ cup grated Parmesan cheese

2 teaspoons Italian seasoning

Salt and pepper, to taste

Fresh basil leaves, for garnish

Lemon wedges, for serving

Instructions

Cook the Linguine: In a large pot of boiling salted water, cook the linguine according to package instructions until al dente. Drain and set aside.

Sauté the Shrimp: In a large skillet over medium heat, add olive oil. Once hot, add the shrimp and season with salt, pepper, and Italian seasoning. Cook for 2-3 minutes until the shrimp turns pink and is cooked through. Remove the shrimp from the skillet and set aside.

Prepare the Sauce: In the same skillet, add minced garlic and sauté for 1 minute until fragrant. Add the cherry tomatoes and cook for another 2-3 minutes until they start to soften.

Add Spinach and Cream: Stir in the fresh spinach until wilted, then pour in the heavy cream. Simmer for 2-3 minutes to thicken the sauce slightly.

Combine Pasta and Shrimp: Reduce the heat to low. Add the cooked linguine and shrimp back into the skillet. Stir in the grated Parmesan cheese until melted and well combined, making the sauce creamy and flavorful. Adjust seasoning with salt and pepper if needed.

Serve: Plate the creamy Tuscan shrimp linguine, garnishing with fresh basil leaves and lemon wedges on the side for added brightness.

Enjoy your delicious and creamy meal!
