12 oz (340g) fettuccine pasta

1 lb (450g) large shrimp, peeled and deveined

2 tablespoons olive oil

1 tablespoon butter

4 cloves garlic, minced

1 cup cherry tomatoes, halved

1 teaspoon Italian seasoning

1 cup fresh spinach

1 cup heavy cream

½ cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add the fettuccine and cook according to package instructions until al dente. Reserve ½ cup of pasta water, then drain the pasta and set aside.

    Sauté the Shrimp: In a large skillet, heat olive oil over medium heat. Add the shrimp and season with salt and pepper. Cook for about 2-3 minutes on each side, or until pink and opaque. Remove the shrimp from the skillet and set aside.

      Prepare the Sauce: In the same skillet, add the butter and garlic. Sauté for about 1 minute until fragrant. Add cherry tomatoes and Italian seasoning, cooking until the tomatoes are somewhat softened (about 3-4 minutes).

        Add Cream: Pour in the heavy cream and bring the mixture to a gentle simmer. Stir in the grated Parmesan cheese until melted and combined, allowing the sauce to thicken slightly.

          Combine Everything: Add the cooked pasta, spinach, and shrimp back into the skillet. Toss everything together, adding reserved pasta water a little at a time until reaching your desired sauce consistency.

            Serve: Taste and adjust the seasoning with more salt and pepper if needed. Garnish with fresh basil if desired. Serve immediately.
