4 cups seedless watermelon, cubed

1/2 cup feta cheese, crumbled

1/4 cup Greek yogurt

2 tablespoons honey (or maple syrup)

1 tablespoon fresh lemon juice

1 teaspoon fresh mint, chopped (optional, for garnish)

Pinch of salt

1 cup water (optional, for thinning the mixture)

Prepare the Watermelon: Start by blending the cubed watermelon in a blender until smooth. If the mixture is too thick, you can add a little water to help with blending. Strain the puree through a fine-mesh sieve to remove excess pulp, if desired, but this is optional for a thicker texture.

    Mix the Creamy Ingredient: In another bowl, combine the crumbled feta cheese, Greek yogurt, honey, lemon juice, and a pinch of salt. Use a fork or a whisk to blend them together until you achieve a creamy consistency. If you prefer a thinner texture, you can add a little water here as well.

      Layering the Pops: In your popsicle molds, alternate layers of the watermelon puree and the creamy feta mixture. You can start with a layer of watermelon puree, then add a layer of the feta mixture, repeating until the molds are almost full, leaving a little space at the top as the pops will expand when frozen.

        Insert Sticks: If your molds come with sticks, insert them at this stage. If not, you can place aluminum foil over the top of the molds and poke sticks through it to keep them in place.

          Freeze: Place the molds in the freezer and let them freeze for at least 4-6 hours, or until completely solid.

            Unmold the Pops: Once frozen, let the molds sit at room temperature for a minute or run them under warm water for a few seconds to loosen the pops before carefully pulling them out.

              Serve: Garnish each pop with a sprinkle of fresh chopped mint, if desired, and serve immediately. Enjoy the refreshing and creamy treat on a hot day!
