Creamy White Chicken Chili

1 lb boneless, skinless chicken breasts

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

2 cans (15 oz each) white beans, drained and rinsed (like navy or great northern beans)

4 cups chicken broth

1 can (4 oz) diced green chiles

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon smoked paprika

1/2 teaspoon salt (or to taste)

1/4 teaspoon black pepper

1 cup corn (fresh or frozen)

1 cup heavy cream

1/4 cup fresh cilantro, chopped (for garnish)

1 lime, cut into wedges (for serving)

Tortilla chips (optional, for serving)

Instructions
 

Sauté the Chicken: In a large pot, heat the olive oil over medium heat. Add the chicken breasts and cook for about 5-7 minutes on each side, or until they are browned and cooked through. Remove from the pot and set aside to cool.

    Sauté Aromatics: In the same pot, add the diced onion and garlic. Sauté until the onion becomes translucent, about 3-4 minutes.

      Combine Ingredients: Shred the cooked chicken using two forks and return it to the pot. Add the white beans, chicken broth, diced green chiles, cumin, chili powder, smoked paprika, salt, and black pepper. Stir well to combine.

        Simmer: Bring the chili to a boil, then reduce the heat to low and let it simmer for about 20 minutes, allowing the flavors to meld together.

          Add Corn and Cream: Stir in the corn and heavy cream. Allow it to gently heat through for another 5 minutes.

            Serve: Taste and adjust seasonings if necessary. Serve hot, garnished with fresh cilantro and lime wedges. For an extra crunch, add tortilla chips on the side or crushed on top.
