Ingredients
  

2 tablespoons olive oil

1 medium onion, diced

4 cloves garlic, minced

1 lb (450g) rotisserie chicken, shredded

4 cups chicken broth

1 cup heavy cream

1 can (14 oz) diced tomatoes, undrained

1 teaspoon Italian seasoning

½ teaspoon red pepper flakes (optional)

9 lasagna noodles, broken into pieces

1 cup ricotta cheese

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil, for garnish

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 4–5 minutes until soft and translucent.

    Add the minced garlic to the pot and cook for another minute, until fragrant.

      Stir in the shredded rotisserie chicken, and cook for 2 minutes, allowing it to warm through.

        Pour in the chicken broth and add the canned diced tomatoes (with juice), Italian seasoning, and red pepper flakes if using. Bring to a gentle simmer.

          Add the broken lasagna noodles to the pot and let them cook for about 10-12 minutes, or until al dente, stirring occasionally.

            Lower the heat and stir in the heavy cream, ricotta cheese, mozzarella cheese, and Parmesan cheese. Mix well until the cheeses are melted and the soup is creamy.

              Season with salt and pepper to taste. If the soup is too thick, you can add more chicken broth to reach your desired consistency.

                Once everything is heated through, garnish with fresh basil before serving. Enjoy your creamy lasagna soup hot!
