Crispy Air-Fryer Eggplant Chips

1 large eggplant, sliced into 1/4-inch rounds

1 cup breadcrumbs (panko for extra crunch)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

2 large eggs, beaten

Olive oil spray

Instructions
 

Prep the Eggplant:

    - Begin by slicing the eggplant into 1/4-inch thick rounds. If desired, sprinkle the slices lightly with salt and let them sit for about 20 minutes to draw out excess moisture. After 20 minutes, rinse and pat dry with paper towels.

      Prepare the Breading Station:

        - In a shallow dish, combine the breadcrumbs, grated Parmesan, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix until well combined.

          - In another shallow bowl, beat the eggs until frothy.

            Bread the Eggplant Slices:

              - Dip each eggplant slice first into the beaten eggs, allowing any excess to drip off, then coat with the breadcrumb mixture, pressing gently to ensure the crumbs adhere. Set the breaded slices aside on a plate.

                Air Frying Time:

                  - Preheat your air fryer to 380°F (193°C) for about 3-5 minutes.

                    - Once heated, spray the air fryer basket lightly with olive oil. Place the breaded eggplant slices in a single layer in the basket. You may need to work in batches depending on the size of your air fryer.

                      - Lightly spray the tops of the eggplant chips with olive oil.

                        Cook:

                          - Air fry for 10-12 minutes, flipping halfway through, until the chips are golden brown and crispy. Keep an eye on them towards the end to avoid burning.

                            Serve:

                              - Remove the crispy eggplant chips from the air fryer and let them cool slightly on a wire rack. This helps to keep them crispy. Serve them warm, optionally with a dipping sauce like marinara or tzatziki.
