Ingredients
  

12 mini sweet peppers

1 lb ground beef or turkey

1 small onion, finely chopped

2 cloves garlic, minced

1 tablespoon taco seasoning

½ cup black beans, drained and rinsed

½ cup corn (fresh or canned)

1 cup shredded cheese (cheddar or Mexican blend)

2 tablespoons olive oil

Salt and pepper to taste

Optional toppings: sour cream, avocado, chopped cilantro, diced tomatoes, or jalapeños

Instructions
 

Prepare the Mini Peppers:

    - Preheat the air fryer to 380°F (190°C).

      - Cut the tops off the mini peppers and remove the seeds. Set aside.

        Cook the Filling:

          - In a skillet over medium heat, add the olive oil and sauté the chopped onion until translucent, about 3-5 minutes.

            - Stir in the minced garlic and cook for another minute until fragrant.

              - Add the ground beef or turkey to the skillet and cook until browned, breaking it up with a spatula. Drain any excess fat if necessary.

                - Stir in the taco seasoning, black beans, and corn. Cook for an additional 2-3 minutes, mixing well until everything is heated through. Season with salt and pepper to taste.

                  Stuff the Peppers:

                    - Carefully spoon the taco filling into each mini pepper cavity, packing them tightly. Top each stuffed pepper with shredded cheese.

                      Air Fry the Peppers:

                        - Arrange the stuffed mini peppers in the air fryer basket in a single layer, making sure they are not overcrowded. You may need to work in batches.

                          - Air fry for 8-10 minutes or until the cheese is melted and the peppers are slightly crispy.

                            Serve and Garnish:

                              - Once done, carefully remove the peppers from the air fryer. Allow to cool for a minute before serving.

                                - Serve warm, garnished with your choice of sour cream, avocado, cilantro, diced tomatoes, or jalapeños.
