1 lb boneless, skinless chicken breasts, sliced into thin strips

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 green bell pepper, sliced

1 medium onion, sliced

3 tablespoons olive oil

2 tablespoons fajita seasoning (store-bought or homemade)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

8 small flour or corn tortillas

Optional toppings: sour cream, guacamole, salsa, shredded cheese, lime wedges, fresh cilantro

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a large baking sheet with parchment paper to ensure easy cleanup.

    Prepare the Chicken & Veggies: In a large mixing bowl, combine the sliced chicken, red, yellow, and green peppers, and onion.

      Season the Mixture: Drizzle the mixture with olive oil and sprinkle the fajita seasoning, garlic powder, onion powder, smoked paprika, salt, and pepper over the top. Toss everything together until the chicken and veggies are well coated in the spice mixture.

        Spread on Baking Sheet: Transfer the seasoned chicken and vegetables onto the prepared baking sheet. Spread them out in a single layer to ensure even baking and crispiness.

          Bake: Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the edges are crispy, stirring halfway through for even cooking.

            Warm the Tortillas: While the chicken fajitas are baking, warm the tortillas. You can do this by placing them in a dry skillet over medium heat for about 30 seconds on each side or wrapping them in foil and heating them in the oven for the last 5 minutes of the baking process.
