Crispy Baked Chicken Parmesan with Zucchini Noodles

2 boneless, skinless chicken breasts

1 cup breadcrumbs (preferably whole wheat or panko)

1/2 cup grated Parmesan cheese

1 teaspoon dried oregano

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/4 teaspoon black pepper

2 large eggs

1 cup marinara sauce (store-bought or homemade)

1 cup shredded mozzarella cheese

4 medium zucchinis (spiralized into noodles)

2 tablespoons olive oil

Fresh basil leaves for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Chicken: Pat the chicken breasts dry with paper towels. If the breasts are thick, consider butterflying or pounding them to an even thickness for more even cooking.

      Create Breading Mix: In a shallow bowl, mix together breadcrumbs, grated Parmesan cheese, dried oregano, garlic powder, onion powder, salt, and pepper.

        Prepare the Egg Wash: In another bowl, whisk the eggs until well combined.

          Bread the Chicken: Dip each chicken breast in the egg wash, allowing excess to drip off, then dredge in the breadcrumb mixture, pressing down to adhere the crumbs thoroughly. Place the breaded chicken breasts on a greased baking sheet.

            Bake Chicken: Bake the chicken in the preheated oven for about 20-25 minutes, or until the chicken is cooked through and the coating is golden and crispy (internal temperature should reach 165°F (75°C)).

              Add Marinara and Cheese: In the last 5 minutes of baking, remove the chicken from the oven, top each breast with marinara sauce, and sprinkle mozzarella cheese on top. Return to the oven and bake until the cheese is bubbly and golden.

                Prepare Zucchini Noodles: While the chicken is baking, heat olive oil in a large skillet over medium heat. Add spiralized zucchini noodles and sauté for about 5-7 minutes, until tender but not mushy. Season with salt and pepper to taste.

                  Serve: Once the chicken is done, pull it from the oven. Serve the crispy chicken Parmesan over a bed of zucchini noodles. Garnish with fresh basil leaves for a burst of flavor and color.
