Crispy Baked Chicken Tenders with Dipping Sauce

For the Chicken Tenders:

1 lb (450 g) chicken breast, cut into strips

1 cup buttermilk

1 tsp garlic powder

1 tsp onion powder

1 tsp smoked paprika

1 cup all-purpose flour

1 cup breadcrumbs (panko for extra crunch)

1/2 cup grated Parmesan cheese

1 tsp salt

1/2 tsp black pepper

1/2 tsp cayenne pepper (optional for a kick)

For the Zesty Dipping Sauce:

1/2 cup mayonnaise

2 tbsp Dijon mustard

2 tbsp honey

1 tbsp apple cider vinegar

1/2 tsp garlic powder

Salt and pepper to taste

Marinate the Chicken:

    In a large bowl, combine the chicken strips with buttermilk, garlic powder, onion powder, smoked paprika, and a pinch of salt. Cover and refrigerate for at least 1 hour, or preferably overnight for maximum flavor and tenderness.

      Prepare the Coating:

        Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper or a silicone baking mat. In three separate shallow bowls, set up your breading station:

          - Bowl 1: Add flour mixed with salt, black pepper, and cayenne pepper.

            - Bowl 2: Pour in the buttermilk marinade (removing the chicken strips).

              - Bowl 3: Combine breadcrumbs and grated Parmesan cheese.

                Bread the Chicken:

                  Take each marinated chicken strip and coat it in the flour mixture, shaking off any excess. Next, dip it into the buttermilk again, then finally coat it in the breadcrumb mixture, pressing gently to adhere. Place the breaded tenders on the prepared baking sheet.

                    Bake the Tenders:

                      Lightly spray the tenders with cooking spray or drizzle with olive oil to enhance crispiness. Bake in the preheated oven for about 20-25 minutes, flipping halfway through, until golden brown and cooked through (internal temperature should reach 165°F / 74°C).

                        Make the Dipping Sauce:

                          While the chicken is baking, prepare the zesty dipping sauce by whisking together mayonnaise, Dijon mustard, honey, apple cider vinegar, garlic powder, and a pinch of salt and pepper in a small bowl. Adjust seasoning to taste.

                            Serve:

                              Once the chicken tenders are golden and crispy, remove them from the oven and let them rest for a few minutes. Serve warm with the zesty dipping sauce on the side.
