Ingredients

For the Chicken Tenders:

1 lb chicken breast tenders

1 cup buttermilk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

1 cup all-purpose flour

1 teaspoon baking powder

1 teaspoon smoked paprika

1 teaspoon dried oregano

1/2 teaspoon cayenne pepper (optional for spice)

2 cups panko breadcrumbs

Olive oil spray or cooking spray

For the Honey Mustard Dipping Sauce:

1/3 cup Dijon mustard

1/4 cup honey

1 tablespoon apple cider vinegar

1 tablespoon mayonnaise

Salt and pepper to taste

Instructions

Marinate the Chicken: In a large bowl, combine the chicken tenders with buttermilk, garlic powder, onion powder, paprika, salt, and pepper. Cover and refrigerate for at least 1 hour, or overnight for best flavor.

Prepare the Breading Stations: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper. Set up three shallow dishes:

      - In the first, combine flour, baking powder, smoked paprika, dried oregano, cayenne pepper, and a pinch of salt.

        - In the second, pour the buttermilk mixture from the marinated chicken (you can use the same bowl).

          - In the third, place the panko breadcrumbs.

Coat the Chicken: Working with one chicken tender at a time, remove it from the buttermilk, letting any excess drip off. Dredge it in the flour mixture, shaking off the excess. Next, dip it back into the buttermilk, and finally coat generously with panko breadcrumbs. Press the breadcrumbs onto the chicken to ensure they stick well. Place the coated chicken tenders on the prepared baking sheet. Repeat with the remaining chicken.

Spray and Bake: Lightly spray the chicken tenders with olive oil spray to help them crisp up. Bake in the preheated oven for about 20-25 minutes, flipping them halfway through, until golden brown and cooked through (internal temperature should reach 165°F or 74°C).

Prepare the Honey Mustard Sauce: While the chicken is baking, whisk together the Dijon mustard, honey, apple cider vinegar, and mayonnaise in a small bowl. Season with salt and pepper to taste. Adjust the sweetness or tanginess by adding more honey or vinegar as desired.

Serve: Once the chicken tenders are crispy and golden, remove from the oven and let them cool for a few minutes. Serve warm with the honey mustard dipping sauce.
