Ingredients

1 pound chicken breast tenders

1 cup buttermilk

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

1 cup all-purpose flour

1 cup panko breadcrumbs

1 teaspoon dried Italian herbs (optional)

2 tablespoons olive oil

For the Honey Mustard Sauce:

½ cup Dijon mustard

¼ cup honey

1 tablespoon apple cider vinegar

Salt and pepper to taste

Instructions

Marinate the Chicken:

In a large bowl, combine buttermilk, garlic powder, onion powder, paprika, salt, and black pepper. Add the chicken tenders to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 1 hour, or up to overnight for best flavor.

      Preheat the Oven:

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Place a wire rack over the baking sheet to allow for even cooking and crispiness.

          Prepare the Breading:

In one shallow dish, place the flour. In a second shallow dish, add panko breadcrumbs mixed with dried Italian herbs (if using). Remove the chicken tenders from the marinade, letting the excess drip off.

              Dredging Process:

First, coat each chicken tender in flour, then dip it back into the buttermilk, and finally roll it in the panko breadcrumbs, pressing gently to adhere. Repeat until all tenders are coated.

                  Arrange and Drizzle:

Place the coated chicken tenders on the wire rack. Lightly drizzle olive oil over the tenders for added crispiness.

                      Bake the Chicken:

Bake in the preheated oven for 20-25 minutes, or until the chicken tenders are golden brown and cooked through (internal temperature should reach 165°F/74°C).

                          Make the Honey Mustard Sauce:

In a small bowl, whisk together the Dijon mustard, honey, apple cider vinegar, and season with salt and pepper to taste. Adjust the sweetness or tanginess according to your preference.

                              Serve:

Once the chicken is done baking, remove from the oven and let it cool for a couple of minutes. Serve the crispy chicken tenders with the honey mustard sauce on the side for dipping.
