Crispy Baked Fish Sticks and Sweet Potato Fries

For the Fish Sticks:

1 pound fresh white fish fillets (like cod or haddock), cut into strips

1 cup panko breadcrumbs

1/2 cup all-purpose flour

1 large egg, beaten

1 teaspoon garlic powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

Lemon wedges (for serving)

For the Sweet Potato Fries:

2 medium sweet potatoes, cut into fries

2 tablespoons olive oil

1 teaspoon cayenne pepper (adjust for spice preference)

1 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

For Dipping Sauce:

1/2 cup mayonnaise

1 tablespoon Dijon mustard

1 tablespoon honey

1 teaspoon lemon juice

Salt and pepper to taste

Instructions
 

Preheat the Oven: Preheat your oven to 425°F (220°C) and line two baking sheets with parchment paper.

    Prepare the Sweet Potato Fries:

      - In a large bowl, combine the sweet potato fries with olive oil, cayenne pepper, paprika, salt, and black pepper. Toss well to coat the fries evenly.

        - Spread the fries out in a single layer on one of the baking sheets. Make sure there's enough space between them for even cooking.

          Prepare the Fish Sticks:

            - In a shallow bowl, combine the flour, garlic powder, smoked paprika, salt, and pepper.

              - In another bowl, place the beaten egg. In a third bowl, add the panko breadcrumbs.

                - Dredge each fish strip first in the flour mixture, then dip it in the egg, and finally coat it with the panko breadcrumbs. Make sure each stick is well-coated.

                  Bake Everything:

                    - On the second baking sheet, place the coated fish sticks in a single layer and drizzle with olive oil.

                      - Once the fries are in the oven, add the fish sticks to the oven as well. Bake for 15-20 minutes until the fries are crispy and golden-brown and the fish sticks are cooked through and crispy on the outside. Flip them halfway through for even cooking.

                        Make the Dipping Sauce:

                          - In a small bowl, combine the mayonnaise, Dijon mustard, honey, lemon juice, salt, and pepper. Mix well and set aside.

                            Serve: Once everything is cooked, plate the crispy fish sticks and sweet potato fries together. Serve hot with the dipping sauce and lemon wedges on the side.
