2 medium zucchinis

1 cup breadcrumbs (preferably whole wheat or panko)

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 large egg

Cooking spray or olive oil for drizzling

Preheat the oven: Preheat your oven to 225°F (110°C) and line two baking sheets with parchment paper.

    Prepare the zucchinis: Wash and dry the zucchinis, then slice them into thin rounds, about 1/8 inch thick. For extra crunch, you can sprinkle salt over them and let them sit for 10-15 minutes to draw out moisture. Rinse and pat dry.

      Prepare the breading station: In a shallow dish, mix together the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, smoked paprika, salt, and black pepper. In another bowl, beat the egg until well combined.

        Coat the zucchini slices: Dip each zucchini slice first into the beaten egg, allowing any excess to drip off. Then coat it in the breadcrumb mixture, pressing lightly to ensure an even coating.

          Arrange for baking: Place the coated zucchini chips in a single layer on the prepared baking sheets. Leave a little space between each chip for proper air circulation. Lightly spray or drizzle olive oil over the top for extra crispiness.

            Bake the chips: Bake in the preheated oven for about 2 hours, flipping the chips halfway through for even cooking. Keep an eye on them towards the end to achieve your desired level of crispiness.

              Cool and serve: Once golden brown and crispy, remove from the oven and let them cool for a few minutes. Serve immediately as a snack or side dish, possibly with your favorite dipping sauce.
