Ingredients

2 medium zucchinis

1 cup all-purpose flour (or almond flour for gluten-free)

2 large eggs

1 cup seasoned breadcrumbs (or panko for extra crunch)

1/2 cup grated Parmesan cheese (optional for added flavor)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

Cooking spray or olive oil for drizzling

1 cup marinara sauce for dipping

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat for easy cleanup.

Prepare the Zucchini: Rinse and dry the zucchinis. Cut them into fry-shaped sticks, approximately 1/4 inch thick. If desired, you can slice them in half lengthwise first for thicker fries.

      Set Up Breading Stations:

        - In one bowl, add the flour and season it with a pinch of salt and pepper.

          - In the second bowl, whisk the eggs until well combined.

            - In a third bowl, mix the breadcrumbs, Parmesan cheese (if using), garlic powder, onion powder, dried oregano, salt, and black pepper.

              Bread the Zucchini:

                - Dip each zucchini fry into the flour, shaking off any excess.

                  - Next, dip it into the egg mixture, allowing any excess liquid to drip off.

                    - Finally, coat the fry with the breadcrumb mixture, pressing gently to adhere the crumbs. Place the breaded fries on the prepared baking sheet.

Bake: Once all the zucchini fries are coated, lightly spray the tops with cooking spray or drizzle with olive oil to help them crisp up. Bake in the preheated oven for 20-25 minutes, flipping halfway through, until they are golden brown and crispy.

Prepare Marinara Sauce: While the fries are baking, heat the marinara sauce in a small saucepan over low heat until warmed through. Optionally, add a pinch of red pepper flakes for a little heat or fresh basil for added freshness.

Serve: Once the zucchini fries are crispy and golden, remove them from the oven and let them cool for a minute before serving. Serve hot with the warmed marinara sauce on the side for dipping.
