1 pound fresh salmon fillet, skinless and boneless

1 cup panko breadcrumbs

½ cup all-purpose flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt and pepper, to taste

Oil, for frying (vegetable or peanut oil)

For the Bang Bang Sauce:

½ cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust for spice level)

1 teaspoon lime juice

1 teaspoon honey (optional for sweetness)

Chopped green onions, for garnish (optional)

Prepare the Salmon: Cut the salmon fillet into bite-sized cubes (about 1-inch pieces). Season with salt and pepper on all sides. Set aside.

    Set Up Breading Station: In three separate shallow bowls, set up your breading station:

      - In the first bowl, place the all-purpose flour seasoned with garlic powder, onion powder, smoked paprika, salt, and pepper.

        - In the second bowl, whisk the eggs until well combined.

          - In the third bowl, add the panko breadcrumbs.

            Coat the Salmon: Dredge each salmon bite first in the flour mixture, making sure to coat it evenly. Shake off any excess flour. Next, dip it into the egg mixture, allowing any excess to drip off. Finally, coat it thoroughly in the panko breadcrumbs, pressing gently to ensure the breadcrumbs adhere well.

              Heat the Oil: In a large skillet or frying pan, heat about ½ inch of oil over medium-high heat. The oil is ready when a panko crumb sizzles when dropped in.
