Ingredients

1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour)

1 teaspoon garlic powder

1 teaspoon smoked paprika

1 teaspoon cayenne pepper (adjust for heat preference)

½ teaspoon salt

½ teaspoon black pepper

1 cup buttermilk (or plant-based milk + 1 tablespoon vinegar for vegan option)

1 cup panko breadcrumbs

1 cup BBQ sauce (your favorite brand)

8 small corn or flour tortillas

1 cup shredded cabbage (green or purple for color)

½ cup pico de gallo

Fresh cilantro, for garnish

Lime wedges, for serving

Instructions

Prepare the Cauliflower: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper. In a large bowl, combine the flour, garlic powder, smoked paprika, cayenne pepper, salt, and black pepper.

Batter the Cauliflower: Dip each cauliflower floret first into the buttermilk, allowing any excess to drip off, then coat it with the flour mixture. Make sure each piece is well-covered.

Bread the Cauliflower: Next, roll the battered cauliflower in panko breadcrumbs, pressing gently to ensure they stick. Place the coated florets on the prepared baking sheet in a single layer.

Bake: Bake in the preheated oven for 25-30 minutes, or until the cauliflower is golden brown and crispy. Halfway through, flip the florets for even cooking.

Toss in BBQ Sauce: Once baked, remove the cauliflower from the oven and toss it in a bowl with your BBQ sauce until well-coated.

Prepare the Tacos: Warm the tortillas on a dry skillet for about 20 seconds on each side, just until they are pliable.

Assemble the Tacos: Place a generous amount of crispy BBQ cauliflower on each tortilla. Top with shredded cabbage, a spoonful of pico de gallo, and a sprinkle of fresh cilantro.

Serve: Serve immediately with lime wedges on the side for an extra burst of flavor.
