1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon salt

½ teaspoon black pepper

1 cup buttermilk (or a dairy-free alternative)

1 cup breadcrumbs (preferably panko for extra crunch)

½ cup grated Parmesan cheese (or nutritional yeast for a vegan option)

2 tablespoons fresh parsley, chopped (for garnish)

Olive oil spray (or regular olive oil)

Preheat the Oven: Start by preheating your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

    Prepare the Cauliflower: Cut the cauliflower into small, bite-sized florets. Ensure they are similar in size for even cooking.

      Make the Batter: In a large mixing bowl, combine the flour, garlic powder, onion powder, smoked paprika, salt, and black pepper. Mix well until all dry ingredients are incorporated.

        Dip in Buttermilk: Pour the buttermilk into the bowl with the dry ingredients, stirring to create a consistent batter. If you prefer a dairy-free version, use unsweetened almond milk mixed with a tablespoon of vinegar as a buttermilk substitute.

          Coat with Breadcrumbs: Place the breadcrumbs and Parmesan cheese in another shallow bowl. Dip each cauliflower floret into the batter, allowing the excess to drip off, then roll in the breadcrumb mixture until fully coated.
