Crispy Cauliflower Buffalo Wings

1 large head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or almond flour for a gluten-free option)

1 cup plant-based milk (or regular milk)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup breadcrumbs (panko for extra crunch)

1/2 cup buffalo sauce (plus extra for serving)

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper.

    Prepare the Cauliflower: In a large bowl, combine the flour, plant-based milk, garlic powder, onion powder, smoked paprika, salt, and black pepper. Whisk until smooth.

      Coat the Cauliflower: Dip each cauliflower floret into the batter, allowing any excess to drip off.

        Add Breadcrumbs: In another bowl, place the breadcrumbs. Roll each battered cauliflower piece in the breadcrumbs until fully coated. Lay the coated florets in a single layer on the prepared baking sheet.

          Bake: Drizzle the florets with olive oil to promote crispiness. Bake in the preheated oven for 20-25 minutes, flipping halfway through until golden brown and crispy.

            Add Buffalo Sauce: Remove the cauliflower wings from the oven, and in a large bowl, mix them with the buffalo sauce until well-coated. Return them to the baking sheet.

              Final Bake: Bake for an additional 10 minutes to allow the buffalo sauce to set and caramelize slightly.
