Ingredients

4 boneless, skinless chicken breasts

1 cup sharp cheddar cheese, shredded

1 cup breadcrumbs (preferably panko for extra crunch)

½ cup flour

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

Salt and pepper to taste

2 tablespoons fresh parsley, finely chopped (for garnish)

Cooking oil (for frying)

Instructions

Prepare the Chicken: Start by preheating your oven to 400°F (200°C). Pat the chicken breasts dry with paper towels and season both sides with salt, pepper, garlic powder, and onion powder.

Set Up Dipping Stations: In three separate bowls, arrange your flour (mixed with smoked paprika), beaten eggs, and a mixture of shredded cheddar cheese and breadcrumbs.

      Bread the Chicken:

        - Dip each chicken breast first into the flour, coating it lightly. Shake off any excess flour.

          - Next, dip the floured chicken into the beaten eggs, ensuring it is completely covered.

            - Finally, press the chicken breasts into the cheese and breadcrumb mixture until well-coated. Ensure they’re packed on for that extra crunch.

Fry the Chicken: In a large skillet, heat about ½ inch of cooking oil over medium-high heat. Once the oil is hot (a small piece of breadcrumb should sizzle when dropped in), carefully place the breaded chicken breasts into the skillet, cooking in batches if necessary. Fry for about 4-5 minutes on each side, or until golden brown and crispy. Make sure the internal temperature reaches 165°F (75°C).

Bake for Final Crispness: After frying, transfer the crispy chicken to a baking sheet lined with parchment paper. Bake in the preheated oven for 10-15 minutes, allowing the cheese to melt while ensuring the chicken stays juicy inside.

Serve: Once done, remove from the oven, sprinkle with fresh parsley, and let it rest for a couple of minutes before slicing or serving whole.

Enjoy: Serve hot with your favorite dipping sauce or alongside a fresh salad or roasted vegetables for a complete meal.
