1/2 cup cornmeal

1/2 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

2 large eggs, beaten

1/4 cup fresh parsley, chopped (optional)

Prepare Zucchini: In a large bowl, combine grated zucchini and salt. Let it sit for about 10-15 minutes to draw out moisture. Afterward, squeeze the zucchini in a clean kitchen towel or cheesecloth to remove excess water. This step is crucial for achieving crispiness.

    Mix Dry Ingredients: In another bowl, whisk together the flour, cornmeal, baking powder, black pepper, garlic powder, and onion powder until well combined.
