Crispy Chicken Caesar Tacos

For the Crispy Chicken:

2 boneless, skinless chicken breasts

1 cup buttermilk

1 cup panko breadcrumbs

1/2 cup all-purpose flour

1 tsp garlic powder

1 tsp paprika

1/2 tsp salt

1/2 tsp black pepper

Vegetable oil (for frying)

For the Caesar Dressing:

1/2 cup mayonnaise

2 tbsp lemon juice

1 tbsp Dijon mustard

1 clove garlic, minced

1 tbsp Worcestershire sauce

1/4 cup grated Parmesan cheese

Salt and pepper to taste

For the Tacos:

8 small flour or corn tortillas

2 cups Romaine lettuce, chopped

1/2 cup cherry tomatoes, halved (optional)

Extra Parmesan cheese for garnish

Fresh parsley or cilantro for garnish (optional)

Instructions
 

Marinate the Chicken:

    - In a bowl, combine the buttermilk and chicken breasts. Make sure the chicken is fully submerged. Cover and refrigerate for at least 1 hour, or overnight for more flavor.

      Prepare the Breading:

        - In one shallow dish, mix the flour, garlic powder, paprika, salt, and pepper. In another dish, place the panko breadcrumbs.

          Bread the Chicken:

            - Remove the marinated chicken from the fridge. Dredge each piece first in the flour mixture, shaking off the excess, then into the panko breadcrumbs, pressing gently to ensure the coating sticks.

              Fry the Chicken:

                - In a large skillet, heat about 1/2 inch of vegetable oil over medium-high heat. Once hot, carefully place the breaded chicken into the skillet. Fry for 6-8 minutes on each side, or until golden brown and cooked through. Remove and place on a paper towel-lined plate to drain excess oil.

                  Make the Caesar Dressing:

                    - In a mixing bowl, whisk together the mayonnaise, lemon juice, Dijon mustard, minced garlic, Worcestershire sauce, and grated Parmesan. Season with salt and pepper to taste.

                      Assemble the Tacos:

                        - Warm the tortillas in a dry skillet or microwave. Slice the crispy chicken into strips. On each tortilla, layer the chopped Romaine lettuce, sliced chicken, a drizzle of Caesar dressing, and cherry tomatoes (if using).

                          Garnish:

                            - Sprinkle extra Parmesan cheese and fresh parsley or cilantro on top for added flavor and color. Serve immediately.
