1 can (15 oz) chickpeas, drained and rinsed

4 cups kale, stems removed and leaves chopped

1 cup cherry tomatoes, halved

1 avocado, diced

1/2 red onion, thinly sliced

1/4 cup feta cheese, crumbled (optional)

1/4 cup sunflower seeds or pumpkin seeds

For the Crispy Chickpeas:

1 tablespoon olive oil

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon sea salt

1/4 teaspoon black pepper

For the Dressing:

3 tablespoons olive oil

2 tablespoons apple cider vinegar

1 tablespoon Dijon mustard

1 tablespoon honey or maple syrup

    - Preheat your oven to 400°F (200°C).

      - In a bowl, mix the drained chickpeas with olive oil, smoked paprika, garlic powder, sea salt, and black pepper until well-coated.

        - Spread chickpeas on a baking sheet in a single layer and bake for 25-30 minutes, shaking the pan halfway through, until they are golden and crispy.

          Prepare the Kale:

            - In a large mixing bowl, add the chopped kale. Drizzle with a bit of olive oil (about 1 teaspoon) and sprinkle with salt. Massage the kale for 1-2 minutes until it’s tender and darkens in color.
