2 cups cottage cheese (low-fat or full-fat)

1 cup grated Parmesan cheese

1/2 cup almond flour (or gluten-free flour of choice)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

Fresh herbs (like rosemary or thyme), finely chopped (optional)

Cooking spray or olive oil for greasing the baking sheet

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. Lightly grease the parchment with cooking spray or olive oil.

    Combine Ingredients: In a mixing bowl, add the cottage cheese, grated Parmesan cheese, almond flour, garlic powder, onion powder, paprika, salt, and black pepper. Mix everything until well combined and a thick batter forms. If using fresh herbs, fold them in at this stage for an added flavor burst.
