Ingredients

2 medium zucchinis, grated and excess moisture squeezed out

1 cup crumbled feta cheese

1 cup all-purpose flour

2 large eggs

1/4 cup grated Parmesan cheese

2 green onions, finely chopped

2 cloves garlic, minced

1/2 tsp dried oregano

Salt and pepper to taste

Olive oil for frying

Fresh parsley, chopped, for garnish (optional)

Lemon wedges, for serving

Instructions

Prepare the Zucchini: Start by grating the zucchinis using a box grater. Transfer the grated zucchini to a clean kitchen towel and squeeze out as much moisture as possible. This step is crucial to ensure crispy fritters.

Mix Ingredients: In a large mixing bowl, combine the squeezed zucchini, crumbled feta, flour, eggs, grated Parmesan, green onions, garlic, oregano, salt, and pepper. Stir until all ingredients are well combined to form a thick batter.

Heat the Oil: In a large skillet, heat about 1/4 inch of olive oil over medium heat. To test if the oil is ready, drop a small amount of the batter into the pan; it should sizzle immediately.

Fry the Fritters: Carefully drop spoonfuls of the fritter batter into the hot oil, flattening them gently with the back of the spoon. Cook in batches, ensuring not to overcrowd the pan. Fry for about 3-4 minutes on each side, or until they are golden brown and crispy.

Drain Excess Oil: Once cooked, transfer the fritters to a paper towel-lined plate to drain any excess oil. Sprinkle with a pinch of salt while they’re still hot.

Serve: Serve the crispy feta zucchini fritters warm, garnished with fresh parsley and lemon wedges on the side. These fritters make an excellent appetizer or a savory snack!
