For the Fish:

2 large cod fillets (about 6 ounces each)

1 cup all-purpose flour

1 cup breadcrumbs (Panko is recommended for extra crispiness)

1/2 teaspoon paprika

1/2 teaspoon garlic powder

1/4 teaspoon cayenne pepper (adjust to taste)

Salt and pepper to taste

1 large egg

1 cup buttermilk

Oil for frying (canola or vegetable oil)

For the Slaw:

2 cups green cabbage, finely shredded

1 cup red cabbage, finely shredded

1 carrot, grated

1/2 cup mayonnaise

1 tablespoon apple cider vinegar

1 tablespoon honey

Salt and pepper to taste

For Assembly:

4 brioche buns

Pickles (optional)

Fresh dill (for garnish)

Instructions
 

Marinate the Fish: In a bowl, combine the cod fillets with buttermilk. Let them marinate in the refrigerator for at least 30 minutes (or up to 2 hours) to tenderize and flavor the fish.

    Prepare the Slaw: In a large mixing bowl, combine the shredded green cabbage, red cabbage, and grated carrot. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and pepper. Pour the dressing over the cabbage mixture and toss until well combined. Refrigerate until ready to use.

      Set Up Breading Stations: In one shallow dish, place the flour mixed with salt, pepper, paprika, garlic powder, and cayenne. In another shallow dish, beat the egg. In a third shallow dish, place the breadcrumbs.

        Bread the Fish: Remove the fish from the marinade, letting the excess buttermilk drip off. Dredge each fillet in the flour mixture, then dip it into the beaten egg, and finally coat it with breadcrumbs, pressing gently to adhere.

          Fry the Fish: Heat about 1 inch of oil in a deep skillet over medium-high heat until it reaches around 350°F (175°C). Carefully add the breaded fish fillets to the hot oil, frying for about 3-4 minutes on each side or until golden brown and crispy. Remove the fish and let drain on paper towels.

            Toast the Buns: In the meantime, butter the brioche buns and toast them in a pan or under a broiler until golden brown.

              Assemble the Sandwiches: Place a crispy fish fillet on the bottom half of each toasted bun. Top with a generous amount of slaw and add pickles if desired. Garnish with fresh dill and place the top half of the bun on top.
