Ingredients

4 medium-sized russet potatoes

3 tablespoons olive oil

4 cloves garlic, minced

2 teaspoons dried oregano

2 teaspoons dried thyme

1 teaspoon paprika

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon cayenne pepper (optional, for heat)

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (optional, for added flavor)

Instructions

Preheat the Oven: Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper for easy cleanup.

Prepare the Potatoes: Wash and scrub the russet potatoes thoroughly. Cut each potato in half lengthwise, then slice each half into wedges about 1 inch thick.

Seasoning Mixture: In a mixing bowl, combine olive oil, minced garlic, oregano, thyme, paprika, salt, black pepper, and cayenne pepper (if using). Stir well to create a seasoning paste.

Coat the Potatoes: Add the potato wedges to the bowl with the seasoning mixture. Toss them until each wedge is evenly coated in the garlic herb mixture.

Arrange on Baking Sheet: Spread the seasoned potato wedges in a single layer on the prepared baking sheet. Ensure they are not overcrowded to allow for maximum crispiness.

Bake: Bake in the preheated oven for 30-35 minutes, flipping the wedges halfway through for even browning. They should be golden brown and crispy on the outside.

Garnish and Serve: Once done, remove from the oven and let them cool for a few minutes. Garnish with freshly chopped parsley and sprinkle Parmesan cheese over the wedges, if desired. Serve hot with your favorite dipping sauce.
